How to steam oat milk: temperature, technique and why it splits
Oat milk needs less air, introduced earlier, and a hard stop at 60 °C. A step-by-step method for steam wands and frothers, plus why lattes split.

Steaming oat milk is not harder than steaming dairy. It is just different, and almost everything written about milk technique is written about dairy.
Two differences drive everything below. Oat milk has very little protein, so it builds foam from added fat and stabilisers rather than protein structure. And that structure is fragile above about 65 °C, where dairy is comfortable to 70 °C.
The method
1. Start cold, and use the right jug
Milk straight from the fridge, and a jug you fill no more than a third to a half full. Cold milk gives you a longer window before the temperature gets away from you — and with oat milk the window is the whole problem.
2. Purge the wand
Half a second of steam to clear condensate. Water in the wand is how you get a watery drink.
3. Air for three seconds, no more
Tip just below the surface, steam on full, and listen for a soft tearing sound — not a shriek, not a gurgle. Three to four seconds of this is all oat milk wants.
Dairy tolerates much more aeration because protein keeps building structure. Oat milk with too much air gives you large, brittle bubbles that collapse in the cup.
4. Submerge and roll
Drop the tip fully under the surface and angle the jug so the milk spins in a smooth whirlpool. This is where texture happens — the vortex breaks the big bubbles you just made into microfoam.
5. Stop at 60 °C
The jug should be warm, not hot. If it is uncomfortable to hold, you have gone past 65 °C and the milk is already breaking down.

6. Groom and pour immediately
Tap the jug once, swirl until glossy, and pour straight away. Oat foam separates faster than dairy foam — thirty seconds on the counter and you are pouring bubbles.
Why your latte splits
Splitting is the emulsion failing in the cup, and it takes a combination of causes:
- Acidity. Espresso sits around pH 5. Light, fruity roasts are more acidic and split oat milk far more readily. Switching to a medium or medium-dark roast fixes this for most people.
- Heat. Milk over 65 °C is already fragile before the coffee arrives.
- Order of pouring. Pour milk into coffee, not coffee into milk. It dilutes the acidity gradually rather than dumping hot acid into the emulsion.
- The milk itself. Non-barista oat milk has no acidity regulator and will split much more easily. If you drink single origins, barista formulation is not optional.

Frothers instead of a wand
The same rules apply, minus the aeration technique. What matters is that your device lets you stop at 60 °C — most fixed-temperature frothers target roughly 70 °C, which is why oat milk disappoints in them. Homemade oat milk
Homemade milk has no stabiliser, so:
- Add 1 tsp of neutral oil per litre at blending time — this is what gives you foam at all.
- Keep it cold and use it within three days.
- Aim for flat whites and cortados rather than dry cappuccinos. The foam is real but it will not hold a tall drink.

Common questions
What temperature should oat milk be steamed to?
55–60 °C, with 65 °C as the absolute ceiling. Beyond that the emulsion breaks down, the foam collapses and the taste flattens.
Why does oat milk split when I add espresso?
Hot, acidic coffee destabilises the oat emulsion. Light roasts are the worst offenders. Use a medium or medium-dark roast, keep the milk below 65 °C, and pour milk into coffee rather than coffee into milk.
Can you steam non-barista oat milk?
You can, but it will foam thinly and drop quickly because it lacks the added fat and stabiliser. It is fine in a cortado or flat white, disappointing in a cappuccino.
Can you re-steam oat milk?
No. Once heated and cooled, the emulsion is already compromised and re-steaming produces bubbles rather than microfoam. Steam what you need.
