Almost every “best milk frother” list is written about dairy and has the word oat added to the title. That is a problem, because the single spec that determines whether a frother works with oat milk is one most of those lists do not mention at all — and one of the most popular frothers in Britain fails it.
This guide is organised around that one requirement.
The spec that decides everything
Dairy milk builds foam from protein. Casein and whey proteins unfold at the surface of a bubble and form an elastic film that holds it in place, and they stay stable well past 70 °C.
Oat milk has almost no protein — around 1 g per 100 ml, and not the kind that does this job. Commercial barista oat milk gets its foam from a different mechanism entirely: added fat (usually about 3% rapeseed oil) plus an acidity regulator that keeps the emulsion stable against hot, acidic espresso. That structure is more fragile than a protein film, and it is specifically fragile to heat.
Push oat milk past roughly 65 °C and three things happen at once: the emulsion starts to separate, the foam loses its scaffolding and collapses, and the sugars take on a flat, faintly cardboard taste.
Dairy is happiest at 65–70 °C. So most frothers are built to stop at around 70 °C. Which means most frothers are calibrated to a temperature that ruins oat milk, with no way to change it.

The gap between “perfect” and “ruined” is about ten degrees. That is why this is a temperature problem rather than a technique problem.

The plunger is a mesh. Pumping it makes real foam. Nobody tells you this.
Heat the milk to 60 °C, pour it into a cafetière, and pump the plunger twenty times. Excellent hardware, calibrated for dairy. Workable for oat with one trick.
The default milk frother in British kitchens, because it comes free with the machine. It is genuinely well made — silent, four programmes, hot and cold foam — and it has exactly one flaw for our purposes: no temperature control. It heats until it decides it is done, which published testing puts in the region of 65–77 °C. That is a fine target for dairy and past the point where oat milk starts to break down. You can work around it, but you will do so every single morning.

This deserves its own section, because if you own a Nespresso machine there is a good chance one of these came free with it, and it is the reason a lot of people conclude that oat milk “just does not froth”.
It is well-made hardware. It is also, for our purposes, calibrated for dairy with no way to intervene — published testing puts its hot cycle somewhere in the 65–77 °C region, which is at or past the point where oat milk begins to fail. There is no button to change that.
Two workarounds, in order of how well they work:
- Use the cold-foam programme. No heat, no problem — and cold oat foam is more stable than hot. If you drink iced lattes, this is not a compromise at all.
- Start fridge-cold and stop it early. Milk straight from the fridge, then lift the lid to cut the cycle roughly 15–20 seconds before it would finish. Use a thermometer for the first week until you know what “early” means on your unit.
Neither is elegant. Both are free, and they are what we would do before spending £180 on a replacement.
What not to buy
Battery stick whisk (£10 handheld)
Makes bubbles, not microfoam. Fine for hot chocolate, wrong for lattes.
The spiral-wire battery whisk sold everywhere for a tenner. It spins fast and whips air into milk, and the result is a head of large, brittle bubbles that sit on top of the drink and collapse within a minute — meringue, not microfoam. That is a texture problem rather than a temperature one, and it is not fixable with technique. We include it because it is the most commonly bought frother in the country and most people are disappointed by it.

It whips large bubbles that sit on the drink like meringue and collapse within a minute, and no amount of technique turns large bubbles into microfoam.
It is genuinely good at hot chocolate, matcha and protein shakes. For an oat flat white, £18 on a cafetière will beat it.
How to choose

Technique, by device
The physics is the same in all of them: introduce a small amount of air early, then break those bubbles down into microfoam, and stop before 65 °C.
Automatic jug frother
- Milk straight from the fridge, filled to the minimum line for the best texture.
- Set 60 °C if you can. If you cannot, plan to stop it early.
- Let it run. Do not shake it mid-cycle.
- Swirl the jug before pouring — foam separates from milk while it sits.
Handheld shear wand (NanoFoamer)
- Heat milk to 60 °C in a pan or microwave. Check with a thermometer.
- Hold the head just below the surface for 3–5 seconds — you want a small amount of air, far less than dairy takes.
- Submerge fully and hold for 15–20 seconds to break the bubbles down.
- Tap the jug once, swirl, pour immediately.
Cafetière
- Heat milk to 60 °C, then pour into the carafe — no more than one third full, because it expands.
- Plunge briskly about 20 times. Short strokes, keeping the mesh under the surface.

Cold foam, for iced drinks
The easy case, and worth knowing because the temperature problem vanishes entirely. Straight from the fridge, any of the above devices, no heating at all. Cold oat foam is more stable than hot, holds for several minutes, and floats cleanly on an iced coffee. If you have a fixed-temperature frother, this is where it shines.
The milk matters more than the machine

Cleaning, which matters more than with dairy
Oat milk contains substantially more sugar than dairy — around 4 g per 100 ml in a typical carton, produced by the enzymes used in manufacture. Sugar caramelises onto a hot surface and sets like varnish, and unlike dried dairy residue it does not soften with a soak.
- Rinse with cold water first, immediately, before anything hot touches it. Hot water on fresh residue bakes it on.
- Then wash properly with hot soapy water.
- On a steam wand: purge for one second and wipe every single time, without exception.
- On induction jugs, never use an abrasive — the non-stick coating is what makes them wipe clean at all.

Why does my oat milk foam disappear so fast?
